I made it!

I survived a weekend with out binge eating or being a total b!tch. Yeah me! 😛

This morning I did an interval program on the treadmill, then I hit up the elliptical and some more ab work. My obliques are really sore and I LOVE it! 🙂 I’m also going to Zumba this morning for some dancing. After that it’s off to L’s class for some reading.

Yesterday I made a deal with C. If she would pick up her mess(es) from the day I’d get her some new coloring books since most of hers are full. Well, she stuck to her end of the bargain so I need to stop at the Dollar Tree after school to get some more books.

Nothing else is on tap for today. I am looking forward to tomorrow’s warmer weather.

Okay, the granola bars are good and will be better with some tweaks.

Crackers? ugg….gross, but DH and L like them.

3 grain bread – pretty good, we devoured over 2/3 of it already!

I’m a Baking Machine!

Here’s my first recipe of the day (photos will be posted later, I’m lazy!)

Homemade Granola Bars

  • 2 c. old fashioned oats
  • 1/4 c. whole wheat flour
  • 1/4 c. wheat germ
  • 1/4 c. flaxseed
  • 1/4 c. honey
  • 1/2 c. unsweetened applesauce
  • 1 t. vanilla
  • 1 1/2 t. cinnamon
  • 1/4 c. sunflower seeds

Heat oven to 350 degrees. Grease the bottom of a 7×11 pan.

Mix all the dry ingredients, add in all the wet ingredients. The mixture should mostly stick together, but add more applesauce if it’s crumbly.

Pan into pan and bake for 20-25 minutes. Cool, cut and eat.

Here are my variations. The original recipe called for raisins, which I don’t have. I used the sunflower seeds instead. It also called for 1/2 c. of them, but I only used 1/4 c. to save some calories. I let them cool a bit and then cut them up before they got too cool. I got 16 bars out of it.

I will definately keep working with this recipe. It could be a tad sweeter and firmer, but since it’s applesauce and not butter it doesn’t really firm up a ton. Both of my girls really like them and so do I and DH. I think they could use almonds, chocolate chips or peanut butter in some fashion too and they’d be even better. The nice thing is they are only 2 points+ each.

Recipe #2 was a

Homemade Wheat Cracker

  • 1 1/2 c. wheat flour
  • 1/4 t. sea salt
  • 1 T. oil (was supposed to be 2 T.)
  • 4-7 T. water

Mix flour & salt. Add in oil and water and knead with hands until it makes a nice dough ball. If it’s too dry add more water. Roll it out and use tiny cookie cutters to make the crackers. Bake in a 325 degree oven for 12-15 minutes. Cool on a rack for 1 hour and enjoy.

I’ll admit I haven’t eaten one yet. L likes them, C doesn’t.

I did add in some herbs to this recipe too. After the taste test later I’ll know more as far as seasoning goes. It was hard to roll out the dough since I skimped on the 1 T. of oil, but I muscled through it!  2 crackers is 1 points+, 3-4 is 2, 5-6 is 3, etc.

Currently in the bread machine I have my 3 seed bread. It’s a tad modified since I don’t have whole flaxseeds, I only have milled flaxseeds. The girls will love this bread and I hope to use it for lunches this week.

Snow covered trees…

after the nice snowfall we had yesterday the trees outside look so wintery.

I’m just itching for daylight savings time. I’m hoping I’ll be able to sleep past 3:45am! It seems that’s when I’m wide awake lately. That’s a tad too early for me!

I did get an easy workout in while I watched most of the movie Precious. I did some fast walking on the treadmill, some elliptical work and a bit of abs and stretching. I was going to pause it where I was but I hit a button on the remote accidentally and I shut it off! Oh well, truthfully I don’t see what’s so great about it and I really don’t care how it ends. *shrug*

This morning I’m going to be experimenting in the kitchen. I have a granola bar recipe and a homemade wheat cracker recipe that I want to try out. I’ll have the kiddos be guinea pigs! LOL

C is having a friend over this morning for a playdate and that should keep the girls happy and occupied for most of the morning. Yesterday when we picked the girls up from my friend’s house they were tired, you could just tell it. We went to the library and they were pretty mellow. L fell asleep on the couch AND went to bed on time. It’s 7am and she’s still asleep. Apparently waking up at midnight to play the Wii is exhausting!

Here’s how my next week is looking so far….

  • T – dentist for both girls at 8am, 11am for me
  • W – Zumba, Weight Watchers
  • T – both schools
  • F – Zumba

It’s supposed to be fairly warm on Tuesday, like 40, so I may go for an outdoor walk that afternoon. Again, I’m lazy in the afternoon so we’ll see how it goes!

It’s quiet here….

this kid’s are at their sleepover and the house is so much quieter! It’s almost to eerie for me. I can’t wait to have them back!

DH and I had a nice & quiet supper last night. It was strange to me to not have the kids asking a bunch of questions and just telling us about their day. Afterwards we watched Waiting for Superman. It’s a documentary about American’s school system. It was a very interesting and sad view of the state of our educational system. It made me happy that my children have such great teachers!

I tried to sleep in this morning, but I was up around 4:30am no matter how hard I tried to sleep. I did an easier workout. 10 min. intervals on the elliptical with abs and arms inbetween sets. My hamstrings are very tight today so I got out the foam roller too. After working out I scrubbed everything in the bathroom, but the floor and straightened up the girl’s craft cabinet in the kitchen. I think I’m going to tackle their craft bins next, it’s easier to do it without them around.

Parent-teacher conferences went really well. Both girls are where they need to be by the end of the year so we have nothing to worry about. We also got the summer school information and I can’t wait to show it to L. She can actually choose from a bunch of different classes….art, sports, cooking, science, etc. She should be very excited!

I’ll be getting the girls after lunch today since I need to return the movie to that side of town anyway. Then we’ll head out to the library so the girls can pick out some books and movies. They don’t get there very often during the school year and they like to hang out in a different environment.

Tomorrow we’ll be having C’s friend over for a playdate and I’m going to attempt to make homemade granola bars. I found a recipe without a lot of sugar or other things I don’t like to use and I’m curious how they’ll work out. It’d be great if it was something the girls really liked and I could put it into their lunches or for snack days at school.

I have nothing else on tap for the weekend. I did most of the laundry yesterday but I’ll need to do a load of darks tomorrow so I have clean Zumba clothes for Monday!

The weekend is here!

Good sunny Friday morning! My day is starting out pretty well.

I slept okay last night, but was wide awake around 3:45am! Too early. I got in some cardio and Level 3 of the Shred this morning. I’m also going to Zumba this morning.

After lunch we have to drop off the girl’s sleepover items, clothes and pillows. Then DH and I head out to conferences. Then it’s on to errands and picking out a movie.

Oh, yesterday on my way to volunteer at school I noticed the heater wasn’t blowing out any air. Thankfully I have a very handy DH and he was able to diagnose the problem, along with Google’s help and buy the part for under $20! Woohooo! I love that DH is able to work on our vehicles, it saves us so much money in the long run.

It’s been a good day!

I’m feeling so much better and I love it! After my volunteering at school I came home to enjoy a delicious lunch and then surfed the web while my lunch settled in. I had some serious strength moves to do today! I did Banish Fat, Boost Metabolism by Jillian Michaels again. In the 54 minutes it took to workout I burned 282 calories! That’s more than I burn at Zumba for the same amount of time. It felt so good to kick, punch and jab. LOL I just may be buying this DVD in the near future, after all it’s only $9 at Wally World.
