Last night for supper I tried something new I found on the Kraft Foods website. It was called Mushroom “Bruschetta” Chicken Skillet. All I really used from their recipe was the topping, here it is……
- 4 oz. chopped fresh mushrooms
- 1/4 c. chopped onions
- 2 T. Balsamic Vinaigrette Dressing
- 1 clove garlic, minced
- salt & pepper
I used a small skillet, sprayed with nonstick spray. I heated it up and added in the mushrooms and onions and cooked for about 8 minutes. Then I added in the garlic, s&p and the dressing. I then cooked it all through for another 5 minutes or so. I used this as a topping to a chicken breast! It was delicious! Almost a wine flavor from the balsamic. I’ll definately make this again since I have the bottle of dressing in the fridge! LOL
Yesterday afternoon I decided on a nice walk around the neighborhood. I just had to get some sunshine! I even ran into a fellow Weight Watcher and former co-worker who lives nearby. She obviously had the same idea I did. Oh, I stayed the same this week at weigh-in, on the nose. How does that happen? At least I’ll have a loss for the entire month of March. According to my home scale it’ll be between 2-3# for the month. I also take my measurements tomorrow, so I’ll see if those have changed much since the beginning of the year.
This morning I decided on a strictly elliptical workout, 60 minutes later I was a sweaty mess! I did break the 60 minutes up into different segments so I could stretch some in between. Today I go to schools to help out. I was going to go to L’s classroom, but the teacher just called and said they have a mixed up schedule today so they don’t need me. I’ll just help out a bit longer in C’s classroom if they need me. I also have laundry going, this never ends!
Tomorrow morning I’m going to Zumba and then in the evening I’m going to a Zumbathon with my friend Tami. Zumbathons are great because there is so much more ‘energy’ in the room. The music is loud and everyone is having a good time.
Saturday morning we are going to the McKenzie Center to learn about maple syrup and to have a horse wagon ride. That afternoon C has a playdate, and I’m still waiting to hear about L.
Sunday is our 13 year wedding anniversary. No big plans, but I am making homemade pizza and strawberry shortcake! Yummo!

Good morning all! What’s wacky about today? Well, my HRM for one. That thing acts bonkers sometimes. For instance, it said my HR was 199 and started beeping at me. Well, I know it wasn’t that high, but it was determined to keep beeping at me for a long time. Annoying…
Anything else wacky? hmm…nothing else, but it’s darn hard to think of titles each day when I lead such a boring life! LOL
Last night we had Parent Club meeting at C’s school. It was over 2 hours! We got a lot of things decided, so it was productive. Now I just have to get all my ducks in a row for Teacher Appreciation Week and solicit help where it’s needed.
This morning I slept in until 5ish and worked out after the kids got on the bus. Running, Shredding and the Elliptical were on tap for today. I’m showered up know and feel so much better.
I have Weight Watchers today at noon. Who knows what’s going to happen? I give up guessing on what their scale will say. 😛
I forgot to mention that L lost another tooth on Friday, but she forgot it in her desk over the weekend. I brought it home with me yesterday after I volunteered. She put it under her pillow last night and the tooth fairy payed another visit! That tooth fairy works hard! 🙂
This morning I did cardio, switching off between the elliptical and the treadmill. 29 APs for this week, lower than normal, but I did have 2 days off. This morning I help out in C’s classroom. I have about 8 or 9 alphabet books to bind together yet. I’m sure I’ll get that done today.
Then it’s off to finish the errands I didn’t accomplish yesterday. Mostly returning clothes and buying some groceries that we are out of. The rest of the day will be relaxing at home.
I finally finished another book! LOL This one was Don’t Let It Be True by Jo Barrett. Good book, it just wasn’t a quick read like some other authors. Finally, I can start something new.
Yesterday was a looonnnggg day. I made it through mentally and physically, I’m just happy to be back to the weekdays and the routine.
This morning I did some elliptical work and a bit of abs. My hamstrings are STILL sore, sheesh, my age is catching up with me. I have Zumba this morning and then I go to L’s classroom to listen to kids read. She’s gotten 3 new kids in her class this year and I read with 2 of them. They transfered in from a different school in town. After that I may or may not run a few errands. They can wait until tomorrow if need be.
No other happenings are going on around here, DH just left for work and the kids are on the bus. Time to myself…aaahhh..
not much happening around here today. I decided to not exercise this morning, maybe later, maybe not. I’m taking it a bit easier this week.

I’m so happy when the sun is shining! I’m also happy after almost 10 hours of sleep. I awoke with a pluggy nose and my right ear hurts. Great…DH has passed on his illness to me.
I decided that 3 miles was in order this morning. I completed that in just over 30 minutes including my warmup and then I walked for another 5 to cool down. I broke out an old ab DVD of mine too and they were burning this morning! Good enough for a Saturday. My hamstrings are sooooo tight this morning that I became friends with the foam roller again. I love that red bundle of foam! LOL
No major plans for the weekend or for today. We will head to the library so the girls can get some books and I can catch up on new magazines. We’ll be making some banana muffins later on and possibly some bread. I forgot to buy more yeast at Wally World the other day so I don’t have a lot left. Sunday we are planning on going to a choir concert at the Zona Gale. It’s to raise money for Japan. It’s also religious, which we aren’t, but I think the kids would enjoy live singing.
Have a terrific day and I’m going to lay low so this illness goes away.
I forgot to mention I made Kale Chips yesterday. You can google it if you don’t know what they are. Anyway, Kale is only 98 cents a bunch at Walmart and I’ve seen so many bloggers talk about it. It was time to try it. They were good. I have 2 modifications for next time (which will be later on today) 1. cut the stem out completely (way too tough) 2. cut them into smaller pieces. I know I have a big mouth, but seriously I need to make them more bite size.
Okay, you can have a FITness day or just a plain old FIT like C did this morning! I had a bit of both myself! LOL
I started my morning with an arm DVD. DH put up a huge old mirror in the basement, so I was checking out my form today as I was lifting. Not too shabby. Then I did 30 minutes on the elliptical while I watched Family Feud and I ended with 10 minutes of abs/legs/stretching. I’m going to Zumba this morning too for some booty-shakin’.
C on the other hand decided to just have a FIT, period. That kid only wants to wear dresses and only wants to wear clothes that she’s already worn and are dirty! Ugg…so after many tears on her part, some minor yelling on mine, she finally made a decision that she could live with for the day. My opinion is it looks wild, but whatever floats her boat, I’m game for.
So after all the yelling and tears, I’m doing laundry, AGAIN. I’m also going to be looking at Walmart again this morning for clearance dresses. I know, I’m a sucker! 😛

Here’s the recipe…
- 2 cups uncooked yolk-free whole wheat noodles (I used 8 oz. radiatore pasta)
- 2 cups sliced fresh mushrooms (I used 8 oz.)
- 2 teaspoons olive oil
- 1 garlic clove, minced
- 1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
- 1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
- 3/4 cup spaghetti sauce
- 2 cups cubed cooked chicken breast (I only had 7 oz. of chicken tenders in it)
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry (I bought the frozen chopped spinach that isn’t frozen like a brick, much more flavorful)
- 1/4 cup shredded Parmesan cheese (I used grated)
- 1-1/2 teaspoons Italian seasoning
- 1/2 cup shredded part-skim mozzarella cheese (I omited this)
- Cook noodles according to package directions. Meanwhile, in a large skillet, saute mushrooms in oil until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, soup, spaghetti sauce, chicken, spinach, Parmesan cheese and Italian seasoning. Cook for 5-8 minutes or until heated through, stirring occasionally.
- Drain noodles; toss with chicken mixture. Sprinkle with mozzarella cheese. Yield: 4 servings.
Nutrition Facts: 1-1/2 cups equals 389 calories, 12 g fat (4 g saturated fat), 73 mg cholesterol, 821 mg sodium, 38 g carbohydrate, 7 g fiber, 35 g protein.
When I calculated it out for points this is what I got…
6 serv=6 points 7 serv=6 points 8 serv=5 points 9 serv=4 points
I went with a 6 point serving (the smaller of the two) and it was filling along with the rest of my supper. My only change would be to add in more seasonings.
We tried a new recipe for supper last night….
Here’s the recipe…
- 1 pound lean ground beef (90% lean) I used 95% lean
- 1 medium onion, chopped
- 1/4 cup chopped green pepper
- 1 jar (14 ounces) pizza sauce – I used 1 c.
- 3 ounces sliced turkey pepperoni (about 50 slices), chopped – I used 2 oz. mini turkey pepperoni
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 6 hamburger buns, split
- 6 tablespoons shredded part-skim mozzarella cheese – we added our own cheese at the table
- In a large nonstick skillet, cook the beef, onion and pepper over medium heat until meat is no longer pink. Drain if necessary. Stir in the pizza sauce, pepperoni and herbs. Bring to a boil. Reduce heat; cover and simmer for 10 minutes.
- Spoon 2/3 cup beef mixture onto each bun; sprinkle with cheese. Place on a baking sheet. Broil 3-4 in. from the heat for 1 minute or until cheese is melted. Replace tops. Yield: 6 servings.
This came out to about 3 points+ per serving, I think I figured 7 or 8 servings. It was good, but nothing compares to my mom’s original recipe! LOL
Weigh-in yesterday had me down 1#! Woohoo!!!! I’m getting there slowly but surely.
This morning’s workout I decided on a mile goal. Meaning I was going to run 4 miles on the treadmill no matter how long it took. Sometimes I do time, like 30 minutes, but today I had a mile in mind. It took me 40 minutes to run it and I cooled down for another 5 with just some walking. This afternoon I’ll be doing my new DVD and I’m thrilled!
This morning I go to both girls’ classrooms to help out and then I have some movies in at the library. One came highly recommended from my friend Sandy, Finding Neverland. We were discussing Johnny Depp movies this past weekend and I’ve never seen this one. I also requested Edward Scissorhands and something else (obviously not that exciting since I don’t remember it!).

On to better things. 🙂 Today I slept in and decided on a day-of-rest. I looked in my log and I’ve worked out for 9 days straight! Too many! LOL I have weigh-in today at noon and who knows what will happen. Sure, my scale says I’m down at home, but it did last week and I had a small gain. It is what it is. Mostly I just need to control the amount of food I eat and how much exercise I get, the weight loss will follow eventually. I’m more like a turtle than a hare anyway.
I have a few ‘goals’ for this Weight Watchers week (Wednesday-Tuesday)…..
- A tad less fruit and more vegetables.
- Cut back on snacks (less popcorn in one sitting).
- Work on eliminating snacking after supper and in front of the TV. (Possibly have hot cocoa instead of food)
- Try some new recipes.
- Break out my new DVD!
