Jillian, Zumba and the Beach!

Good morning! I did DVD #11 this morning with Jillian! Tough! Parts just suck! Others are fun and easy, so it’s a balance I guess. 😛

I’m going to Zumba this morning at 8:30am and then we have a beach playdate for 1pm today. Before the beach I have to stop into the library to drop off and pick up books. I don’t know if we’ll get in a bike ride today or not, but maybe I can get a quick walk in after supper.

Hubby and I are trying to work out our upcoming vacation plans. Hopefully we can get concrete decisions made today since we leave next Thursday! Hotels in the UP book up fast.

No other news happening here. Things are good. 🙂

Keep your receipt!

Good morning. Lucky hubby had the receipt and box for C’s android. They exchanged it no problem! Just to be safe he purchased the 1 year warranty on both tablets. 🙂

My morning workout was 50 minutes on the treadmill. I’m also going to Zumba at 9:30am. We may just sneak in a bike ride at some point today too. The girls are starting to get into it again.

Supper tonight will be a new recipe with sweet italian sausage, pasta and kale. We’ll see how it turns out.

Nothing else new to report. Just enjoying the day!

Android down!

Good Sunday Morning! The girls had a sleepover at grandma’s last night. Their cousin is in town this week and grandma thought they could all hang out. It went pretty well, except C’s android isn’t working. Hmm….hopefully the warranty is in effect still.

Hubby and I just came home after dropping them off and ate dinner together and then watched the olympics. This morning I did my final DVD #10 workout with Jillian. I only have 2 more weeks to go! I’m going to preview them later on and see what I am in for. These last two were pretty tough, well at least certain moves were. I’m not sure what I’m going to do after this is done. It’s been all consuming for the past 3 months. My weight today was 149.2# which is great considering I made chocolate souffle last night for dessert. Granted it was a Weight Watchers recipe, but still, extra food and all.

This morning hubby and I got some errands done without the kids and then just returned from picking them up. I’ve accomplished 3 loads of laundry and they just need to be folded and put away yet. Thankfully the kids are home to help out with that chore!

On tap for today is hubby working on the van. It needs and oil change, tire rotation and he needs to look at my squeaky brakes. I’m just going to take it easy (again) and watch some more olympics.

This coming week doesn’t have too much out of the ordinary going on.

  • Monday – Zumba
  • Tuesday – Zumba, beach day with the girls’ cousin
  • Wednesday – Work at Weight Watchers, weigh-in for the month of AUGUST!
  • Thursday – Bake cookies, Library wrap-up party
  • Friday – Garage sale at our house
  • Saturday – Birthday party for nephew
  • Sunday – relax 🙂

More recipes!

Good Saturday Morning! I slept in until 5ish and then headed downstairs for my workout. 20 minutes on the elliptical while watching the Olympics, Jillian’s DVD #9 (for the final time!) and then a 10 minute walk on the treadmill while watching more olympics. 150# on the scale, nice.

Last night I made a recipe from the Weight Watchers website with slight modifications.

Ingredients

  2 t. olive oil, extra-virgin, divided   
  1 medium uncooked zucchini, cut into 1/4-inch slices   
  1 pound uncooked shrimp, large-size, peeled and deveined   
  1 cup grape tomatoes, cut in half   
  1/2 tsp dried oregano   
  1/2 tsp table salt   
  1/4 tsp black pepper, freshly ground, or to taste   
  1 1/2 tsp minced garlic   
  1/4 cup water   

Instructions

  • Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat. Add zucchini in a single layer; increase heat to high and cook until bottoms are golden, about 2 minutes. Flip zucchini and cook until golden on other side, about 2 minutes more. Remove zucchini to a plate with a slotted spoon.
  • Heat remaining teaspoon oil in same skillet. Add shrimp; sauté 1 to 2 minutes. Add tomatoes, oregano, salt and pepper; sauté until shrimp are almost just cooked through, about 1 minute. Stir in garlic and water; sauté, stirring to loosen bits from bottom of pan, until shrimp are cooked through and tomatoes are softened, about 1 to 2 minutes more. Return zucchini to skillet; toss and serve. Yields about 1 1/4 cups per serving.

We had 3 larger servings of this at 4 PP+ each. Almost like shrimp scampi without all the butter. L ate all of hers and asked if there was more! Sadly, there wasn’t.

Breakfast was an oatmeal bake. I prepped it after my workout and put it in the oven while I showered. The concept was off of a website, Chocolate Covered Katie.

  • 1/2 c. old fashioned oats
  • 1 packet truvia
  • dash of salt
  • 1 T. maple syrup
  • 1 t. poppyseeds
  • some rhubarb
  • 1 mashed banana
  • about 1/4 c. of water

Mixed it all together and baked at 375 for 20 minutes. Yummy!

We are going to check out the animals at the fair this morning and the art exhibits. My family already saw the animals once, but they are willing to go back so I can see them! 🙂

Happy Friday!

Good morning!

Yesterday the girls and I headed to the Farmer’s Market in town. I got to commiserate with fellow gardeners about the weather this year. It was nice to learn I’m not alone in my struggles with the vegetables. I was most surprised to find rhubarb! Seriously? Mine is/was awful about the size of a drinking straw at best. This stuff was lovely. He said it got a lot of water because it’s on the edge of his vegetable garden. I bought some. They also had huge beets! Here’s a photo for proof.

I can’t wait to eat them later on today.

I also bought an eggplant yesterday. I made eggplant fries with it, which were surprisingly good. Even hubby liked them and he hasn’t been a fan of them in the past. I think the trick was to bake them at a high heat and spice them up a bit with seasoning. I have those leftover too and look forward to eating those later on.

Tonight I’m trying a new recipe from the Weight Watchers website. It’s shrimp with zucchini and tomatoes. I’m sure the kids won’t be fond of it but they can have sandwiches if they don’t like it! 🙂

My workout this morning was running on the treadmill. I chose two programs on the treadmill and went to town! The scale is at 150.4# this morning even though I ‘feel’ much heavier. What’s with that?

Later on we are headed to the library and maybe a bike ride on the levee. Last night C and I went for a ride on the levee, the weather was gorgeous and it was fun to see her on her new bike.

I’m here…

I forgot to post this morning. I think having Zumba at 8:30am threw me off a bit! LOL

My workout was 20 minutes on the elliptical and then DVD #9 with Jillian. I gave ‘er a bit more this morning and felt pretty good and sweaty afterwards. The scale rang in at 149.8#, always hovering around the 150 mark. I wish the 150’s were a thing of the past, someday soon.

Zumba was fun this morning. The class size was pretty small, but that’s typical for a Tuesday. My friend Tami taught class, I haven’t been to one of hers for a while. She tried to torture me with ab work, squats, etc. I accepted the challenge and worked up a sweat!

After lunch the girls and I head over to her house to watch the kiddos while she takes her daughter to therapy for her wrist. Maybe today the baby will sleep while she’s gone! LOL Last time we watched him he decided an hour nap was the max he was going to do. It was fun to hang out with him, he’s funny and snuggly and smelled like a baby still, even though he walks and tries to talk.

Hubby called a bit ago and said they were rained out. He’s going to check on prices for tires for his truck. Lately we’ve been putting a little money into getting his truck up to par. We’ve had the fuel sensor replaced, new windshield, new side mirror and finally the new tires. It’s enough money, but still less than a truck payment would be for us.

His job is in limbo. The last thing he heard is that they will be closing down soon. Maybe as soon as Labor Day. That sucks for our family. His income supports our family. There is no where else he can work and bring home the amount of money he does each week. That may mean we’ll have to go back to both of us working full time. I’m not against working, it’s just I’ve been home for so long that I feel sad about leaving the girls that much. I know during the school year it won’t make as much difference, but I feel sad all the same.

A new week is here!

Good Monday morning. I had a truly lazy weekend and I’m fine with that. 🙂

Yesterday the girls and I headed out for some shopping. Kmart and Walmart both have jeans on sale, like $7 or $9 a pair! Nice. We also found shirts on clearance for $2-3 and got a bunch of those. I think we’re okay for the start of school in September we just need to buy them new tennis shoes and nice shoes.

I took photos of my lunch and supper yesterday. Lunch was eggs and veggies cooked in oil. Dinner was homemade french bread pizza and salad. They were both awesome!

My workout this morning was two programs on the treadmill. One was intervals and the other rolling hills. I also did 10 minutes of abs on my own. I haven’t done that in ages, probably since the end of May when I started Jillian’s 90 Day Body Revolution. I have 4 workouts left for DVDs 9 & 10 and then it’s on to the final two weeks. I’m about ready for this to be over and move on to something else. What? Who knows. I did preview her Ripped in 30 Days DVD from the library. I may just buy that I’m not sure.

I’m going to Zumba today at 9:30am and then our agenda is clear. I really need to get the girls working on math again. They’ve been slacking.

Recipe time again

Good morning! I was NOT going to work out this morning, but then while I was using the facilities I had a change of heart! LOL I tackled Jillian and DVD #10. It was tough, still. I tried harder, but some moves are just tough for me. My weight was 149.4#, nice.

Crust-less Zucchini Pie

Servings: 6 • Serving Size: 1/6th • Old Points: 3 pts • Points+: 3 pts
Calories: 125.3  • Fat: 4.8 g • Protein: 8.1 g • Carb: 13.1 g • Fiber: 2.0 g • Sugar: 2.5 g
Sodium: 420.1 mg

Ingredients:

  • 10 oz shredded zucchini, all liquid drained
  • 1/2 cup shallots, chopped (I used onions)
  • 1/4 chopped fresh chives (I didn’t have)
  • 1/2 cup part skim mozzarella
  • 2 tbsp grated parmesan cheese
  • 1/2 cup white whole wheat flour (King Aurthur)
  • 1 tsp baking powder
  • 2/3 cup fat free milk
  • 1 tsp olive oil
  • 2 large eggs, beaten
  • 1/2 tsp kosher salt
  • fresh cracked pepper to taste
  • cooking spray

Directions:
Preheat oven to 400°. Lightly spray a pie dish with cooking spray or your misto. Combine zucchini, shallots, chives, and mozzarella cheese in a bowl.

Sift flour and baking powder in a medium bowl. Add remaining ingredients to the bowl and blend well. Combine with zucchini mixture and pour it into the pie dish.

Top with parmesan cheese and bake 30-35 minutes or until knife comes out clean from the center. Let it stand at least 5 minutes before serving.

Makes 6-8 servings.

We used them as 4 servings at 5 PP+ each. Yummy! Hubby ate 1/2 the pie and the girls each ate their entire 1/8th slice without complaints. 🙂

Nothing else happening today. Oh except cleaning up the litter box area! Woo hoo!

It snowed!

In my dream last night it was snowing. Really!? What is that about. I’m hoping the rain will hit our area today though.

I’ll recap yesterday a bit. We arrived at Noah’s Ark around 12:30ish. The kids had a blast! They went on a lot of rides, but the lines were a lot longer this year. Last year we went on a Tuesday and there was a lot less people, this year going on Friday proved to be busier. We ended up running into two families from our town more than once. It was neat to see people we knew. While I didn’t go on any rides I got to do a lot of people watching, which I always find fascinating! Yesterday did not disappoint. 🙂

The park closed at 7pm so that’s when we all changed clothes and headed out to Perkins for supper. That was a mistake, we should have just driven home and ate there. First of all, we were a party of 9, I get that. However, it was not busy at 7pm. The waitress could NOT get our orders right, things were forgotten, 2 orders were messed up and Amanda had no food until we were all done eating. Thankfully she wasn’t charged for her meal. It was after 8pm before the kids had any food and they were wilting at the table. Surprisingly no one got crazy, but I felt bad for them. They were so tired and hungry from the day. We ended up home at 9:30pm! The kids were zombies and hubby wondered what happened to us. Sadly, Perkins will NOT be on our list for next year’s dinner plans. I also did not leave a nice tip for her, she was a spaz.

So, I got to bed around 11pm, woke up at 4am and layed on the couch for an hour. I just couldn’t lay in bed anymore, but I was still tired. I managed to get downstairs around 6am for my workout with Jillian. It’s still a tough workout. Then hubby left to get his windshield repaired, without the kids. We decided they needed sleep and I could to Zumba on Monday & Tuesday like normal. When hubby left I headed out to the garden to pull some weeds. Let’s just say I have no weeded the potato plants EVER! Some of the grass was literally 3 feet wide! Thankfully the rain we had the other day still has our soil moist so they pulled out easy. I was out there for a solid 30 minutes pulling weeds and a few potatoes came up with it! They are such cute red potatoes. 🙂

I also decided to take the rest of my seeds: beets, lettuce, spinach, radish, arugula and just spread them in a 3’x6′ area and see what happens. The seeds aren’t doing me any good in the packet, but I have a feeling not much will happen with them.

Since I want a little time to myself today I’ll be heading to Walmart later on. Whenever hubby gets home I’m going to do some serious grocery shopping. It seems we are out of all the staple type foods and I need to plan out a few meals before I go. The girls are really missing spending time with their dad too and were a bit disappointed we let them sleep in, but mother knows best. 😛

The mosquitoes are back.

All it took was a bit of rain to bring out the mosquitoes! I was in my garden this morning fighting them off. I was also happy to see my garden is still wet from the rain we had on Wednesday. 🙂

My workout this morning was purely cardio. I did 2 miles on the treadmill and another 20 minutes on the elliptical. Today we are going to Noah’s Ark and while I won’t be seriously active there will be a lot of walking involved in my day.

We’ll be enjoying an early lunch, like 10:40am early and then heading out to my friend Stacci’s house to pick up the kids. Prior to that I have to stop at Kwik Trip and purchase my Noah’s Ark tickets yet. My two girls will get in with their free tickets, but I have to purchase mine and one for the teenage girl I’m covering the costs for. It’s a small price to pay to have someone help out with the kids at the waterpark.

Supper tonight is going to be Perkins so everyone can choose what they’d like. I have a few options in mind and the points figured out so I can stay on track. My scale said 149.8# this morning and I have to keep that in mind when I’m looking at all the goodies today. Although I may have some dippin’ dots if I feel like it. I always sneak in my own snacks buried in the towels in our bag, so far I haven’t gotten busted.
