More snow!

Good morning! It seems winter is just hanging on! School was delayed 2 hours AGAIN this morning. That means Zumba was cancelled, Boo to that. Since I was working out in the basement when I saw the delay I stayed on the elliptical a bit longer. I got in Level 1 of Ripped in 30, and 30 minutes on the treadmill. I also work Weight Watchers today, so that will get me a bit more activity. My weight today was 148# on the nose. I’m not weighing in at work today either since I’m about the same as last week AND the week before. Next week I’ll be weighing in for the month though.

Last night we had parent teacher conferences for the girls. I’m super proud of both of them! They are doing great in school and really enjoy it! I told them I wanted a photo of them this morning showing how much they love each other! This is what I got….

Last night we got the Summer School schedule. I’m excited for the girls this summer. I want them to branch out a bit and try some new things. They are reluctant about a few things, but we are pushing it. We’ll have to get the classes figured out soon since we have to turn it in soon.

Yesterday QTI called me about the job I applied for. They said they have one person being interviewed for the position, but they’ll call me if it doesn’t work out. I’m not holding my breath. Hubby also applied for another job today. We’ll see what happens.

It’s Monday!

Good afternoon! I went MIA yesterday, but I had a great day! I went to a Zumbathon in the afternoon with my friend Denise. It was so great to have someone there with me. It turns out there were people there I knew, but didn’t know well.

My workout this morning was 15 minutes on the elliptical, and then Level 3 of the 30 Day Shred. I also went to Zumba this morning, something I haven’t done on a Monday for a bit. I exercised yesterday morning too, I think I did the treadmill for a bit. 😛 The scale was 148.4# yesterday and today.

I applied for a job over the weekend. I don’t know if I’ll hear anything back about it. Hubby hasn’t heard about his job prospects either, but he may be applying for a different position.

I work tonight for Weight Watchers since Brandy will be training a new receptionist. I’m there as a filler mostly. I’ll do the setting up and take down so she can concentrate on training. I don’t know if I’ll have to go back next week or not. This week and next week on Wednesday it will just be Sue and I. Our numbers were down last week so Cheryl can’t come this week and then next week she needs the day off. I’ll miss seeing her, I love chatting with her and she’s so much fun!

Sleepy Saturday!

I’m not sleepy but my 10 year old is! Apparently they went to sleep around 3am and got up at 7am! Wow! There is no way I could do that in my old age. She’s doing okay, but a tad grumpier than usual. 😛

C on the other hand was asleep by 9:30pm and she and Addie were up at 6:45am. They got enough sleep. I even managed to sleep until 5:30ish. I got in 15 minutes on the elliptical and then did Level 2 of Jillian’s 6 Week 6 Pack Abs (or whatever the title is). It was tough, fun and had a few moves she hasn’t done before. Overall I liked it and I may just end up purchasing this DVD as well. The scale was 147.6#.

The girls and I did some reading already this afternoon and now they are watching Monk. Hubby is at Menards, again. LOL I have nothing else going on today and I’m great with that. Tomorrow Denise and I are going to a Zumbathon and we are going to meet up with my friend Tara. I’m excited for the afternoon!

Next week looks like so…

  • Monday – Zumba at 9am, work Weight Watchers in the Dells?
  • Tuesday – 8am Dentist for the girls, Parent Teacher Conferences at night
  • Wednesday – Zumba at 9am, work Weight Watchers

I also applied for a job through a staffing agency, so maybe I’ll hear about that next week too. I’m not 100% qualified, but I have to give it a shot anyway.

Why do I have my windows open when it’s 28 degrees?

Well, hubby is redoing his closet organization. The bad side is he’s staining the wood in the basement and well, the noxious fumes have made it through the entire house. So we have a window cracked open and the patio door. It’s been that way a few hours now and I’d say the stench is almost gone! The bonus is the cat is loving the fresh air and being able to hear the birds at the feeder.

I broke down last night and bought a new ActiveLink. My old one is gone, just gone. I checked in the parking lot at the bank and Walgreens. I called Walgreens, I looked at Walmarts lost & found and I looked at the church. No luck, it’s gone. My new one is currently charging and I have my name and phone number on it already! LOL Hopefully I won’t lose this one, but if I do I’m hoping someone would return it to me.

My exercise this morning was Level 2 of the 30 Day Shred and then I did 2-10 minute segments on the elliptical. I may or may not walk this afternoon on the treadmill and I WILL go to Zumba at 3:45 as long as hubby is back in time for C and her friend to get off the bus. He has a blood donation at 1:30pm and it takes at least an hour, but he plans on going early to get the registration done. I have to leave here around 3:25pm if I hope to make it to class on time. I hate being late. Oh, I did brave the scale this morning again, 147.8#! Thankfully.

Last night at Weight Watchers we got in some new products. Strawberry oatmeal, Key Lime bars and a Mint Cookies n Creme Smoothie. I bought the smoothie to try out, it will be my afternoon/before Zumba snack. I’ll review it afterwards. I did not buy the bars yet since I have some Lemon Mousse ones at home still, so maybe next week I’ll give them a shot. The oatmeal will not be on my radar, I make my own oats at home and I’m good with that.

I’ll leave you with a bird picture. I’ve been trying to take photos for the last half hour, but the birds keep scattering. I’ve seen so many awesome birds today.

I LOST it!

Ugg…I lost my ActiveLink yesterday. I’m about 95% sure I had it on when I left for Weight Watchers yesterday. I went into the Credit Union, Walgreens and then into the church to work. After the church I stopped at Walmart for a few items and then came home. I called Walgreens and no one turned it in. I’m going to swing through their parking lot on my way to Weight Watchers tonight. I did call the church and asked her to look in the restroom and if she found it to put it in our closet. I’m hoping it’s there! If not, I’m ot sure if I’ll purchase another one or not. Sad. 😦

So, yesterday was rough for me. I did not go to Zumba instead I asked hubby to walk the levee with me. The sun was out yesterday and while it was cold, like 23 degrees or so, it was tolerable. Since I was in such a mood I walked pretty darn fast and hubby was asking me to slow down a bit. Usually I ask him to take it easy on ME! Ha. So I did go a bit overboard with snacks last night. I knew it would happen, such is life. The scale said 149.2# this morning, only up .2# Thank goodness I’m back on track today so that that .2 doesn’t turn into 2!

My exercise this morning was 20 minutes on the elliptical and then Level 1 of the 30 Day Shred (original one). I gave it my all too, I was butt-kicking double time, using heavier weights, etc. I should probably walk a bit on the treadmill this afternoon too. I work tonight and I have to pick up a birthday card before that. Since it wasn’t on my list yesterday I of course forgot it!

Oh, the post office called me yesterday. I applied for a 2nd position with them before I heard from the first one. Well, it turns out this one starts at 5:30am AND it’s a 1/2 hour away! So, no go. 😦 Boo to job hunting!

Feeling blech…

So, I wasn’t going to post today. I’m just feeling like, ugg…it’s hard to explain. Part of it is that I slept in today and did not work out. That alone affects my mood. Anyone else? I know I’m going to Zumba this afternoon, but I still feel guilty. Sheesh…then the scale sais 149# up 1# from yesterday. I’m sure it’s my popcorn & salt from last night, but it’s still annoying. I know, I invest a lot into the scale, whatever.

This morning I thought about eating a bunch of junk and just going crazy. Yep, I have those thoughts. Anyway, instead of doing that I ate my oatmeal for breakfast and had one cappuccino. Then I was feeling the urge to splurge. So, I got out my food scale, measured out some chocolate cereal and a chocolate fiber bar and ate that with some water. That wasn’t quite ‘enough’ so I had a small oatmeal cookie from the weekend. As I savored it, instead of devoured it I told myself that’s it. So I flossed, brushed, stuck in some gum and am on here blogging about it. I’m happy to say I did NOT binge! It’s empowering to conquer that ‘inner demon’ telling me to do things that make me feel bad.

Enough of all that, I’m moving on. 🙂 I have to leave soon for working at Weight Watchers. I’m not weighing in today at work. I’m up at home from last week’s home weight, so I’m good with that. Next week is another time to weigh-in. Hopefully by then my mood will be better. 😛 I have to drop of our taxes so they can submit them online. Thankfully we get a refund this year. I also need to stop at the bank to get some change for my cash box. Working in the Dells on Monday wiped out all my change! Hubby is in Baraboo shopping for lumber, he’s going to redo his closet so it’s a more organized space. He’s also going to hit up Aldi so I don’t have to do it Sunday after the Zumbathon.

It’s icy out there!

Last night I worked Weight Watchers in the Dells. Boy, that was an experience! One lady in particular got my feathers in a ruffle, but I kept my cool. I just came home and vented to hubby! 😛 On the way home it was raining and the temperature was dropping below freezing. I was surprised that school wasn’t delayed this morning.

My morning workout was 15 minutes on the elliptical, 15 minutes on the treadmill, repeat one more time. I also did a bit of hula hooping in there too. I found I’m much better at it if I keep my arms crossed on my chest. Don’t know why, but it works. The scale at home was 148#, I’m not gonna lie, I wanted to see a 147.something. It is what it is. I’ve still lost 37# since 2005 and kept most of it off with some ‘relosing’ of the weight here and there.

Hubby’s job interview was okay, but he’s not going to take the job if they offer it to him. It’s not what it’s cracked up to be and I don’t blame him. I have to call the Post Office today and tell them that the job won’t work out for me. I’m disappointed.

We are working with L’s school to have her skip 5th grade next year and just go into 6th grade. It requires a little bit of paper work and we had to answer a few questions about her to go on the Acceleration Scale that they use to determine if she’s a good fit for advancement. We aren’t doubting she will be, considering she was last year and her grades are just as good if not better than last year. When we have conferences next Tuesday we’ll be meeting with her 5th grade math teacher and the Learning Coach at her school. Truthfully we should have advanced her in Kindergarten like they suggested, but better late than never! LOL She’s excited about it this time around, last year there was NO WAY she wanted to do it.

No other news from me. Today I’m staying home. It’s cold, windy and snowing, yuck! Laundry, baking bread, making oven beef stew and chores will keep me busy around here. Enjoy your day!

It’s Monday?

This weekend really messed with my head. I totally thought this morning was Sunday and I didn’t have to wake up to my alarm blaring, wrong! I got up and headed downstairs for my workout. I got in 40 minutes on the elliptical, some hula hooping and some ab work. Sadly, my DVD from yesterday did not make more core sore today. I was secretly looking forward to some oblique pain. 😛 My scale said 147.6# and I’ll take it. I made it through another weekend without losing control with my food and for that I am proud. It’s not always easy for me and I ‘tempted’ myself by baking cookies, which I only did because I was feeling strong mentally. This morning I also went to a fun Zumba class! I was actually sweating afterwards! LOL

Hubby went to a job interview. He called me on his way home, he’s not sure. We’ll see what happens. He has another application in somewhere else and that’s the job he’d prefer. I hope he hears this week about having an interview with them or not. Still nothing for me. Oh well.

Not much else to say from me. I’m happy for the warmth today and took advantage of it by filling my gas tank before the temperature dips tomorrow. Boo to cold & windy weather.

2 New Recipes!

Oatmeal Cookies

Oatmeal Cookies
Weight Watchers Recipe
  
Prep time: 10 min
Cook time: 14 min
Other time: 0 min
Serves: 16 (mine made 26 small scoops NOT 32)
Vary your batch of this homespun hero by adding 1/2 cup of raisins to the batter.
 

Ingredients

  3/4 cup all-purpose flour   
  1 1/2 cup uncooked quick oats   
  1/2 tsp baking soda   
  1/4 tsp table salt   
  1 tsp ground cinnamon   
  1/2 tsp ground ginger   (omitted)
  1/4 tsp ground cloves   (omitted)
  1/2 cup salted butter, softened   
  3/4 cup packed light brown sugar   
  1/4 cup sugar   (used 2 T.)
  1 large egg white   

Instructions

  • Preheat oven to 350°F.
  • Whisk together flour, oats, baking soda, salt, cinnamon, ginger and cloves in a medium bowl. Place butter in a large bowl or in the bowl of a mixer and beat butter for a few seconds. Gradually add sugars and beat to combine.
  • Add egg white to butter mixture and beat to combine. Add dry ingredients and beat to combine.
  • Drop batter by tablespoonfuls onto 2 ungreased cookie sheets, leaving 2 inches between each cookie. Bake until set and golden, about 11 to 14 minutes. Remove cookies to wire racks to cool. Yields 2 cookies per serving.

Notes

  • Adding 1/2 cup of raisins to the batter does not increase the PointsPlus value per serving (2 cookies per serving).

So with my alterations and how many cookies I got, each cookie was 2 PointsPlus. Not too shabby. There were delicious too! I savored mine while it was still warm out of the oven. The rest are in the freezer ready to go into lunches.

Recipe number two was part of tonight’s supper. I liked it and so did hubby, but the girls didn’t like it. I probably won’t make this very often, but I’m glad I tried something new. Oh, and I’ll be eating leftovers of it for a bit even though I made 1/2 of the recipe.

Lentil Sweet Potato Curry Recipe

Lentil Sweet Potato Curry Recipe

 

Prep: 20 min. Cook: 35 min.
  • Yield: 6 Servings

 

Ingredients

  • 1 cup dried lentils, rinsed  (1/2 c.)
  • 3 cups water, divided  (1 1/2 c.)
  • 1 large onion, chopped (1/2 c.)
  • 1 tablespoon olive oil (1/2 T.)
  • 2 medium carrots, chopped (1/2 c.)
  • 3 garlic cloves, minced (2 cloves)
  • 2 medium sweet potatoes, peeled and chopped
  • 4 teaspoons curry powder (2 t.)
  • 3/4 teaspoon salt (1/4 t.)
  • 1/2 teaspoon pepper (1/4 t.)
  • 2 medium tomatoes, chopped (1 tomato)
  • 1 medium apple, peeled and chopped
  • 1 tablespoon brown sugar (1/2 T.)
  • 3 cups hot cooked brown rice (no rice)

Directions

  • In a small saucepan, combine lentils and 1 cups water; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until tender. Drain.
  • Meanwhile, in a large saucepan, saute onion in oil until tender. Add carrots and garlic; cook 2 minutes longer. Stir in the sweet potatoes, curry, salt, pepper and remaining water. Bring to a boil. Reduce heat; cover and simmer for 10 minutes.
  • Add the tomatoes, apple and brown sugar; cover and cook 10-15 minutes longer or until apple is tender. Stir in lentils; heat through. Serve with rice. Yield: 6 servings.

Nutritional Facts 1 cup lentil mixture with 1/2 cup rice equals 333 calories, 4 g fat (1 g saturated fat), 0 cholesterol, 325 mg sodium, 63 g carbohydrate, 15 g fiber, 13 g protein.

I divided mine into 5 servings at 3 PointsPlus each.

It’s a Sunny Sunday!

Good morning! Yesterday hubby was quite busy building a loft for L. It turned out great and she’s super happy about it. The hard part is getting the cat up there, since she’s declawed she can’t really dig into anything to get up there. She can get down though, we’ve witnessed that! Here’s the bed, don’t mind any mess, it’s a lot better than it used to be.

I also made a new recipe for supper last night. It’s from the Weight Watchers website.

Slow-Cooker Cheeseburger Soup

Slow Cooker Cheeseburger Soup
 
Prep time: 15 min
Cook time: 120 min
Serves: 8

Ingredients

  2 spray(s) cooking spray   
  1 clove(s) (medium) garlic clove(s), minced   
  1 medium uncooked onion(s), chopped (I used 1 cup)  
  1 rib(s) (medium) uncooked celery, chopped    (I used 1/2 cup)
  1 pound(s) uncooked 93% lean ground beef   (I used 96% lean)
  2 Tbsp all-purpose flour   (I used 1 T)
  3 cup(s) canned chicken broth, divided (I used 2 c. water, 2 bouillon cubes)  
  1 cup(s) low-fat evaporated milk   (I used fat free)
  8 oz low-fat cheddar or colby cheese, cubed   (I only had 4 oz. colby jack)
  1/2 tsp paprika   
  1/4 tsp table salt   
  1/8 tsp black pepper   
  24 item(s) baked low-fat tortilla chips, crumbled   (didn’t use)

Instructions

  • Coat a large nonstick skillet with cooking spray and heat over medium-high heat for about 30 seconds. Add garlic, onion and celery to skillet; cook, stirring frequently, until vegetables are tender, about 5 to 10 minutes. Coat a 3-quart or larger slow cooker with cooking spray; spoon in vegetables.
  • Place same skillet over medium-high heat and brown beef, breaking up meat with a wooden spoon as it cooks, about 5 to 6 minutes; pour off any liquid and add meat to slow cooker.
  • In a small cup, combine flour and 1/2 cup of broth; stir until lump-free. Pour flour mixture into same skillet; add remaining 2 1/2 cups of broth. Bring to a simmer, scraping up any browned bits in bottom of skillet with a wooden spoon, and then pour into slow cooker; stir in evaporated milk, cheese, paprika, salt and pepper. Cover slow cooker and cook on low setting for 2 hours. Serve soup topped with crumbled chips. Yields about 3/4 cup of soup and 3 tablespoons of chips per serving.

Notes

  • If the soup cooks too long, the cheese could separate. If that happens, combine 1 tablespoon of all-purpose flour and 1/4 cup of soup in a cup; stir to a paste. Stir flour mixture back into soup in slow cooker; cover and cook on low setting for 10 to 15 minutes.

Prior to me making this recipe I read the reviews. Most said it was too soupy, so I omitted 1 c. of water and it seemed just right to me then. As I was eating it it reminded me of something. Then it hit me! It tasted like Hamburger Helper, but loads better! It was delicous, the girls liked it and all we have left is about one small bowl.

On to today. My workout was 24 minutes on the treadmill doing a program, and then walking for another 15 or so minutes. I then busted out this DVD from the library.

6 week 6 pack

Surprisingly I have NOT done this DVD before. I stuck with level 1 and it was pretty good. She has you go through all the moves once at a nice slower pace and then you repeat it much quicker! About 30 minutes or so and it was pretty tough. I’m hoping to feel some abdominal burn tomorrow! LOL My weight this morning was 147.2#! Sweet! Can you see how bad I want my reward of a massage?

After breakfast hubby and I went to the store, we left the girls home alone this time. They did great! They were even dressed by the time we got back. It seems they are more motivated to do things when we aren’t around nagging them. Hmm…

This afternoon I may or may not be baking some oatmeal cookies. I’m leaning more towards may at this point. I like to freeze them and then put one in the girls’ lunches during the week. This upcoming week L isn’t interested in any hot lunch from the school and C only chose Friday.

Oh, in some great news, I have someone going along with me to the Zumbathon next Sunday! My friend Denise says it sounds like a good time and I thankful for the company for the drive over and having someone to dance with. I also messaged an old friend on Facebook who lives in Baraboo and who now is a Zumba instructor herself and invited her to meet me there. I haven’t seen her in ages, she’s lost a lot of weight, gave up gluten (since her child has issues) and looks fantastic in photos. I can’t wait to see her in real life again!
